Food poisoning is most often caused by foodborne infection with microorganisms or their toxins. It is the responsibility of every food manufacturer to ensure the quality and safety of the produced food.
Existing food legislation applicable throughout the food chain is designed to keep risk factors, including microbiological hazards, as low as possible, therefore microbiological analysis is an integral part of food safety management and includes microbiological testing to monitor the current situation, analyze trends and identify potential threats.
